Ingredients:
1 pound beef top sirloin steak, thinly sliced against the grain
¼ cup soy sauce
2 tablespoons white sugar
2 tablespoons cornstarch
½ teaspoon ground ginger
3 tablespoons vegetable oil, divided
1 red onion, cut into 1-inch squares
1 green bell pepper, cut into 1-inch squares
2 tomatoes, cut into wedges
Instructions:
1. Marinate the Beef
In a bowl, mix the soy sauce, sugar, cornstarch, and ground ginger. Add the sliced beef and toss to coat. Let it marinate for at least 15–20 minutes (longer if possible for more flavor).
2. Cook the Beef
Heat 1 tablespoon of oil in a large skillet or wok over medium-high heat. Add the marinated beef and stir-fry for 2–3 minutes, or until just browned but not fully cooked through. Remove from the pan and set aside.
3. Stir-Fry the Vegetables
Add the remaining 2 tablespoons of oil to the same pan. Stir-fry the red onion and green bell pepper for 3–4 minutes until slightly tender but still crisp.
4. Combine and Finish Cooking
Return the beef to the pan, add the tomato wedges, and stir everything together. Cook for another 2–3 minutes until the tomatoes soften slightly and the beef is cooked through. Taste and adjust seasoning if needed.
5. Serve
Serve hot over steamed rice or noodles.
