🦪 Pan-Seared Garlic Butter Scallops
Ingredients:

1 lb large sea scallops (patted dry)

2 tbsp olive oil

3 tbsp unsalted butter (divided)

3 cloves garlic (minced)

1 tbsp lemon juice
-
2 tbsp fresh parsley (chopped)

Salt & pepper (to taste)
Instructions:

Prepare scallops: Pat scallops dry with paper towels. Season lightly with salt and pepper.

Sear: Heat olive oil in a skillet over medium-high heat. Add scallops (don’t overcrowd the pan). Sear for about 2 minutes per side until golden brown with a nice crust. Remove and set aside.

Make garlic butter sauce: In the same skillet, add 2 tbsp butter and minced garlic. Sauté for about 1 minute until fragrant. Stir in lemon juice and remaining butter.

Combine: Return scallops to the skillet, spoon sauce over them, and cook for another 1 minute to coat well.

Serve: Garnish with parsley and serve hot with lemon wedges. 🍋
