🍬 Caramel Pecan Fudge (WW-Friendly)

🛒 Ingredients

For the Fudge:

  • 1 can (14 oz) fat-free sweetened condensed milk – 24 points

  • 1 bag (11 oz) sugar-free white chocolate chips (e.g. Lily’s) – 33 points

  • 1 tsp vanilla extract – 0 points

  • 1 tbsp light butter – 2 points

  • ¼ cup chopped pecans – 5 points

  • ½ cup puffed rice cereal (or crushed rice cakes for crunch) – 2 points

  • ¼ cup sugar-free caramel syrup – 0 points


👩‍🍳 Instructions

  1. Melt the Base:
    In a microwave-safe bowl, combine the white chocolate chips, condensed milk, and light butter. Microwave in 30-second intervals, stirring in between, until smooth and fully melted.

  2. Add the Crunch:
    Stir in the vanilla extractchopped pecans, and puffed rice cereal until evenly mixed.

  3. Spread & Swirl:
    Pour the mixture into a parchment-lined tray or square pan. Drizzle the sugar-free caramel syrup over the top and use a knife or toothpick to swirl it decoratively into the fudge.

  4. Chill:
    Place in the refrigerator and chill until firm, at least 2 hours or overnight.

  5. Cut & Store:
    Slice into 25 pieces. Store in an airtight container in the fridge to maintain texture.
