Pineapple Chicken

Ingredients:

1.5 lbs chicken breast

1/2 cup pineapple juice

2 tbsp soy sauce

1 tbsp brown sugar or honey

1 tsp grated ginger (or 1/2 tsp ground)

2 cloves garlic, minced

Optional: red pepper flakes or a dash of hot sauce for heat

Instructions:

1. In a bowl or zip-top bag, combine pineapple juice, soy sauce, brown sugar (or honey), ginger, garlic, and optional red pepper flakes.

2. Add chicken and coat well in the marinade.

3. Marinate in the fridge for at least 30 minutes, up to 8 hours.

4. Preheat grill or skillet over medium heat.

5. Cook chicken 5–7 minutes per side, or until internal temperature reaches 165°F (75°C).

6. Let rest for 5 minutes before slicing. Serve with rice, grilled veggies, or in tacos.

Fajita Chicken

Ingredients:

1.5 lbs chicken breast

1/3 cup olive oil

Juice of 1 lime

1 tsp chili powder

1 tsp cumin

1 tsp paprika or smoked paprika

1/2 tsp garlic powder

1/2 tsp onion powder

1/2 tsp salt

Optional: sliced onions & bell peppers

Instructions:

1. In a bowl or bag, whisk together olive oil, lime juice, and spices.

2. Add chicken and mix until well coated.

3. Marinate for at least 30 minutes, up to 24 hours.

4. Heat a large skillet over medium-high heat.

5. Cook chicken for 5–7 minutes per side, or until fully cooked.

6. Optional: In the same skillet, sauté sliced onions and bell peppers until soft and slightly charred.

7. Slice chicken and serve in tortillas, bowls, or salads.

 

 

Lemon Garlic Chicken

Ingredients:

1.5 lbs chicken breast

1/4 cup olive oil

Juice and zest of 1 lemon

3 cloves garlic, minced

1 tsp dried oregano (or thyme)

1/2 tsp salt

1/4 tsp black pepper

Instructions:

1. Mix olive oil, lemon juice and zest, garlic, herbs, salt, and pepper in a bowl.

2. Add chicken and turn to coat evenly.

3. Cover and marinate for 30 minutes to 4 hours in the fridge.

4. Preheat oven to 400°F (200°C) or use a grill/skillet.

5. Bake for 20–25 minutes or grill 5–7 minutes per side until fully cooked.

6. Let rest, then slice and serve with roasted veggies, pasta, or salad.

 

 

Smoky Mustard Chicken

Ingredients:

1.5 lbs chicken breast

1/2 cup barbecue sauce

2 tbsp Dijon or grainy mustard

1 tbsp apple cider vinegar

1 tsp smoked paprika

Optional: 1 tsp honey or maple syrup

Instructions:

1. In a bowl, mix BBQ sauce, mustard, vinegar, smoked paprika, and optional honey.

2. Add chicken and mix until evenly coated.

3. Marinate for 30 minutes to 6 hours in the fridge.

4. Grill or pan-sear chicken over medium heat for 6–8 minutes per side, or until cooked through.

5. Optional: Baste with extra sauce in the final minutes of cooking.

6. Rest before slicing. Great in sandwiches, wraps, or with roasted potatoes.
