Ingredients:
8 lamb chops (about 1 inch thick)
3 tablespoons olive oil
4 cloves garlic, minced
1 tablespoon fresh rosemary, chopped
1 tablespoon fresh oregano, chopped
1 teaspoon dried thyme
Juice and zest of 1 lemon
1 teaspoon sea salt
1/2 teaspoon black pepper
1/2 teaspoon paprika
1/4 teaspoon cinnamon (optional, for warmth)
Fresh parsley, chopped (for garnish)
Directions:
Preheat oven to 400°F (200°C). Lightly oil a baking dish or sheet pan.
In a small bowl, mix olive oil, garlic, rosemary, oregano, thyme, lemon juice, zest, salt, pepper, paprika, and cinnamon (if using).
Rub the mixture evenly over both sides of the lamb chops and let marinate for 15 minutes.
Arrange lamb chops in the baking dish in a single layer.
Bake uncovered for 18–22 minutes, flipping halfway through, until chops reach desired doneness (145°F for medium-rare, 160°F for medium).
Remove from oven and let rest for 5 minutes.
Garnish with fresh parsley and serve warm with roasted potatoes or a crisp Greek salad.
