Ingredients
2 cups walnut halves
1/2 cup granulated sugar
3 tbsp light brown sugar
1/2 cup water
2 tbsp unsalted butter
1/4 tsp salt
1/2 tsp cinnamon (optional)
Instructions
Prep: Line a baking sheet with parchment paper.
Combine: In a large non-stick skillet, combine walnuts, both sugars, water, and butter (and cinnamon, if using).
Cook: Bring to a boil over high heat. Cook for 4-6 minutes, stirring constantly once the mixture begins to thicken. Cook until the liquid evaporates and the walnuts are coated in a thick, glossy syrup.
Season & Set: Remove from heat. Immediately stir in the salt, then pour onto the prepared baking sheet. Separate into a single layer with a spatula.
Cool: Let cool completely until hard and crisp. Break into pieces and serve.
Version 2: A Bit More Descriptive & Engaging
Quick & Easy Candied Walnuts
Transform simple walnuts into a sweet, crunchy treat in just minutes! Perfect for salads, desserts, or snacking.
Ingredients
2 cups walnut halves
1/2 cup granulated sugar
3 tablespoons packed light brown sugar (for a hint of caramel)
1/2 cup water
2 tablespoons unsalted butter
1/4 teaspoon fine sea salt
1/2 teaspoon ground cinnamon (a warm, optional boost)
Directions
Prepare: Line a rimmed baking sheet with parchment paper or a silicone mat. This prevents sticking and makes cleanup a breeze.
Mix Everything: Place the walnuts, granulated sugar, brown sugar, water, and butter into a large non-stick skillet. (Add the cinnamon now if you’re using it).
Cook to Perfection: Set the skillet over high heat. Bring the mixture to a rapid boil, stirring occasionally. After about 3 minutes, the bubbles will get larger and the syrup will begin to thicken. At this point, stir constantly for another 1-2 minutes until the syrup reduces completely and coats the nuts in a shiny, caramelized layer.
Finish and Cool: Take the skillet off the heat and quickly stir in the salt. Immediately transfer the glazed walnuts to your prepared baking sheet and spread them into a single layer. Allow them to cool completely and harden, about 15 minutes.
Serve: Once crisp, break the candied walnuts apart and enjoy!
