Bacon Mushroom Swiss Cheese Meatloaf Recipe



Ingredients:

1 lb ground beef

1/2 lb ground pork

1 cup breadcrumbs

1/2 cup milk

1/2 cup grated Parmesan cheese

1/2 cup finely chopped onions

1 cup finely chopped mushrooms

4 slices bacon, cooked and crumbled

1 cup shredded Swiss cheese

2 large eggs

1 tbsp Worcestershire sauce

Salt & pepper to taste

Instructions:

1. Prep the Oven:

Preheat oven to 375°F (190°C).

Line a baking sheet with parchment or lightly grease a loaf pan.
2. Soften the Breadcrumbs:

In a large mixing bowl, combine breadcrumbs and milk.

Let sit for 5 minutes to absorb — this keeps the meatloaf moist.
3. Cook the Aromatics:

In a skillet over medium heat, sautรฉ the onions and mushrooms in a little oil or butter until softened and most moisture has evaporated (5–7 minutes).

Let cool slightly.

4. Mix the Meatloaf:

To the breadcrumb mixture, add:

Ground beef & pork

Cooked onion/mushroom mixture

Parmesan cheese

Crumbled cooked bacon

Shredded Swiss cheese

Eggs

Worcestershire sauce

Salt & pepper to taste

Mix gently until combined. Avoid overmixing to keep it tender.
5. Shape & Bake:

Shape into a loaf on a lined baking sheet or press into a loaf pan.

Bake for 45–55 minutes, or until internal temp reaches 160°F (71°C).
6. Optional Glaze (while baking):

If desired, brush the top with a mix of ketchup + a splash of Worcestershire + a dash of brown sugar for a sweet-savory crust.

Add during the last 15 minutes of baking.
7. Rest & Serve:

Let rest for 10 minutes before slicing to keep juices inside.

Serve with mashed potatoes, gravy, or roasted vegetables.
