Garlic Butter Shrimp Scampi Lasagna

📝 Ingredients

For the Lasagna:

  • 9 pre-cooked lasagna sheets

  • 500g peeled and deveined shrimp

  • 4 cloves garlic, minced

  • 100g butter

  • 200g grated mozzarella

  • 2 tbsp chopped fresh parsley

  • 2 tbsp olive oil

  • 1 tbsp lemon juice

  • Salt and pepper, to taste

For the Creamy Sauce:

  • 50g butter

  • 3 tbsp flour

  • 750ml milk

  • 200ml heavy cream

  • 1 pinch nutmeg

  • Salt and pepper, to taste

Instructions:

1. Prepare the Creamy Sauce:

  1. In a saucepan, melt 50g butter over medium heat.

  2. Add flour and whisk for 2 minutes to form a blond roux.

  3. Gradually pour in milk, whisking constantly until thickened.

  4. Stir in heavy creamnutmegsalt, and pepper. Mix well, then set aside.

2. Cook the Shrimp:

  1. Heat olive oil in a large skillet over medium-high heat.

  2. Sauté garlic for 1 minute until fragrant.

  3. Add shrimpbutterlemon juicesalt, and pepper. Cook until shrimp turn pink (~3-4 minutes).

  4. Stir in parsley, then remove from heat.

3. Assemble the Lasagna:

  1. Preheat oven to 180°C (350°F).

  2. In a baking dish, spread a thin layer of creamy sauce.

  3. Layer 3 lasagna sheets, followed by shrimpmozzarella, and sauce. Repeat layers, ending with sauce.

  4. Top with Parmesan.

4. Bake:

  1. Cover with foil and bake for 30 minutes.

  2. Uncover and bake for 15 minutes until golden and bubbly.
