Ingredients:

  • 6 large eggs
  • ½ cup milk (or heavy cream for a richer texture)
  • 1 medium zucchini, thinly sliced into rounds
  • 1 cup cherry tomatoes, halved
  • ½ cup crumbled feta cheese (or shredded cheese of your choice)
  • ¼ cup grated Parmesan cheese
  • 1 garlic clove, minced
  • 1 tablespoon olive oil
  • 1 teaspoon dried oregano (or Italian seasoning)
  • Salt and black pepper, to taste
  • Fresh parsley, chopped (for garnish)

Instructions:

  1. Preheat the oven or air fryer:
    • Oven: Preheat to 375°F (190°C).
    • Air Fryer: Preheat to 350°F (175°C).
  2. Sautรฉ the zucchini:
    • Heat olive oil in an oven-safe skillet (or air fryer-safe dish) over medium heat.
    • Add the zucchini slices and cook for 2-3 minutes until slightly tender.
    • Stir in the minced garlic and cook for another minute.
  3. Prepare the egg mixture:
    • In a large bowl, whisk together the eggs, milk, dried oregano, salt, and black pepper.
    • Stir in the grated Parmesan cheese and half of the feta cheese.
  4. Assemble the frittata:
    • Pour the egg mixture evenly over the sautรฉed zucchini in the skillet or dish.
    • Arrange the cherry tomato halves on top and sprinkle with the remaining feta cheese.
  5. Cook the frittata:
    • Oven: Bake for 20-25 minutes, or until the center is set and the top is golden.
    • Air Fryer: Cook at 350°F (175°C) for 12-15 minutes, checking for doneness.
  6. Garnish and serve:
    • Let the frittata cool for a few minutes.
    • Sprinkle with freshly chopped parsley, slice, and serve warm.
