Ingredients:
2 cups cooked, shredded chicken
1/2 cup BBQ sauce (your favorite variety)
1 1/2 cups shredded mozzarella cheese
1 cup shredded cheddar cheese
1/4 red onion, thinly sliced
2 tablespoons chopped cilantro (optional)
1 tablespoon olive oil
4 large flour tortillas
Sour cream and salsa, for serving
Directions:
In a large bowl, combine shredded chicken and BBQ sauce until fully coated.
Lay out tortillas on a flat surface. On half of each tortilla, sprinkle a mix of mozzarella and cheddar cheese.
Add a layer of the BBQ chicken mixture over the cheese. Top with red onion slices and cilantro.
Sprinkle a bit more cheese over the top, then fold each tortilla in half.
Heat olive oil in a skillet over medium heat. Place folded quesadillas in the skillet, cooking 2–3 minutes per side until golden brown and the cheese has melted.
Remove from the skillet, let rest for a minute, then slice into wedges.
Serve hot with sour cream, salsa, or extra BBQ sauce for dipping.
