This dish never fails to fill the house with an incredible aroma, and it’s always a crowd-pleaser among friends and family.


 


Ingredients:

  • 1 pound lean chuck beef, cubed and at room temperature
  • 4 cups beef broth
  • 1 cup red wine (optional)
  • 3 carrots, sliced
  • 3 celery stalks, sliced
  • 1/2 cup roasted bell peppers, chopped
  • 2 potatoes, peeled and diced
  • 1 yellow onion, chopped
  • 2 cloves garlic, minced
  • 1 bay leaf
  • 3 sprigs fresh thyme or 2 teaspoons dried thyme
  • 1/4 cup all-purpose flour
  • Olive oil
  • Salt and pepper to taste

Instructions:

  1. Pat the beef cubes dry with a clean kitchen towel or paper towel. Season generously with salt and pepper on all sides. Lightly coat the beef with flour, shaking off any excess.
  2. Heat a drizzle of olive oil in a large pot over medium heat. Working in batches to avoid overcrowding, brown the beef cubes on all sides.
  3. Transfer the browned beef, along with any juices from the pot, into a slow cooker. Add the beef broth, red wine (if using), carrots, celery, roasted bell peppers, potatoes, onion, garlic, bay leaf, and thyme.
  4. Cover and cook on the low setting for 6 to 8 hours, or until the beef is tender and the flavors have melded together.
  5. Before serving, remove the bay leaf and discard.
