Ingredients
- 2 cups gluten-free all-purpose flour
- 1/4 cup vegetable oil
- 1/2 teaspoon salt
- 1/4 cup cold water (more if needed)
- 2 medium potatoes, boiled and mashed
- 1/2 cup green peas (fresh or frozen)
- 1 teaspoon cumin seeds
- 1 teaspoon garam masala
- 1 teaspoon coriander powder
- 1/2 teaspoon chili powder (adjust to taste)
- Salt to taste
- Oil for frying
Directions
1. In a mixing bowl, combine the gluten-free flour, salt, and vegetable oil, rubbing them together until you achieve a breadcrumb-like texture.
2. Gradually add the cold water, mixing until a soft dough forms. Knead gently for a few minutes, then cover with a damp cloth and let it sit for 30 minutes.
3. For the filling, heat oil in a skillet over medium heat and add cumin seeds. Once they crackle, add in the mashed potatoes and green peas.
4. Stir in the garam masala, coriander powder, chili powder, and salt. Cook for a few minutes while combining all the flavors, then set aside to cool.
5. Once the dough has rested, divide it into equal portions and roll each portion into a ball. Flatten each ball into circles approximately 6 inches in diameter.
6. Cut each circle in half, then take one semi-circle and shape it into a cone, sealing the edge with a little water.
7. Fill the cone with the potato-pea mixture and seal the open side firmly by pressing the edges together. Continue this process until all the dough and filling are used.
8. Heat oil in a deep pan over medium heat. Fry the samosas in batches until they turn golden brown and crispy, then drain on paper towels.
