Ingredients:
1.5 – 2 lb (680–900g) pork tenderloin
Salt & pepper to taste
1 tbsp olive oil For the Honey Garlic Sauce:
1/4 cup honey
4 garlic cloves, minced
1/4 cup low sodium soy sauce
2 tbsp apple cider vinegar (or rice vinegar)
1 tbsp Dijon mustard (optional, but adds depth)
1/2 tsp red pepper flakes (optional, for a kick)
Instructions:
1. Prep the Pork:
Preheat oven to 400°F (200°C).
Pat pork dry with paper towels.
Season all over with salt and pepper.
2. Sear the Tenderloin:
In an oven-safe skillet (like cast iron), heat 1 tbsp olive oil over medium-high heat.
Sear pork on all sides until browned (about 2–3 min per side).
3. Make the Sauce:
While pork sears, whisk together honey, garlic, soy sauce, vinegar, Dijon, and red pepper flakes in a bowl.
4. Add Sauce & Roast:
Pour sauce over pork in the skillet.
Transfer skillet to the oven and roast for 15–18 minutes, or until the internal temperature reaches 145°F (63°C).
Baste the pork with the sauce halfway through for more flavor.
5. Rest & Serve:
Remove from oven and let pork rest for 5–10 minutes.
Slice and drizzle with the sauce from the pan.
