Lamb Chops with Roasted Tomatoes and Mushrooms!


 


Ingredients:
For the Lamb Chops:

4 lamb chops 🥩

2 tbsp olive oil 🍈

1 tbsp fresh thyme 🌿

1 garlic clove, minced 🧄

Salt and pepper to taste 🧂

1 tbsp balsamic vinegar 🍷

For the Roasted Vegetables:

1 cup cherry tomatoes 🍅

1 cup baby mushrooms 🍄

1 tbsp olive oil 🍈

Salt and pepper to taste 🧂

1. Prep the Lamb Chops:
Preheat your oven to 400°F (200°C).

In a small bowl, mix the olive oil, minced garlic, thyme, salt, and pepper. Rub this mixture all over the lamb chops and let them marinate for about 15 minutes.

2. Cook the Lamb Chops:
Heat a skillet over medium-high heat and add a bit of olive oil. Sear the lamb chops on each side for about 3-4 minutes until browned.

Add the balsamic vinegar to the skillet and cook for another minute. Transfer the lamb chops to the oven and roast for 10-12 minutes for medium-rare (adjust time for desired doneness).

3. Roast the Vegetables:
Toss the cherry tomatoes and mushrooms with olive oil, salt, and pepper. Spread them out on a baking sheet.

Place them in the oven alongside the lamb for the last 10 minutes of cooking, allowing them to roast and soften.

4. Assemble and Serve:
Plate the lamb chops with roasted tomatoes and mushrooms on the side. Drizzle any remaining balsamic sauce from the skillet over the lamb for extra flavor.
