Ingredients:
1.5 lbs ripe tomatoes (heirloom, beefsteak, or vine-ripened)
6 tbsp extra virgin olive oil
2 tbsp red wine vinegar (or red grape vinegar)
⅓ cup finely chopped red onion
1 garlic clove, minced
2 tsp fresh basil, chopped
2 tsp fresh parsley, finely chopped
1 tsp fresh dill, finely chopped
Salt and freshly ground black pepper, to taste
Instructions:
