Marinated Tomato Salad with Herbs & Garlic


 


A vibrant, refreshing salad showcasing juicy tomatoes soaked in a zesty herb and garlic vinaigrette.

Ingredients:

  • 1.5 lbs ripe tomatoes (heirloom, beefsteak, or vine-ripened)

  • 6 tbsp extra virgin olive oil

  • 2 tbsp red wine vinegar (or red grape vinegar)

  • ⅓ cup finely chopped red onion

  • 1 garlic clove, minced

  • 2 tsp fresh basil, chopped

  • 2 tsp fresh parsley, finely chopped

  • 1 tsp fresh dill, finely chopped

  • Salt and freshly ground black pepper, to taste

Instructions:

  1. Prepare the Tomatoes: Rinse and dry the tomatoes, then slice them into ⅓-inch thick rounds. Arrange them in a single layer in a shallow serving dish.

  2. Make the Marinade: In a small bowl, whisk together the olive oil, vinegar, red onion, garlic, basil, parsley, dill, salt, and pepper until fully combined.

  3. Marinate the Tomatoes: Pour the dressing evenly over the tomatoes, ensuring each slice is coated. Cover and refrigerate for at least 2 hours, flipping the tomatoes once halfway through for even flavor absorption.

  4. Serve: Enjoy chilled or at room temperature as a side dish with grilled meats, crusty bread, or fresh mozzarella.

Tip: For extra richness, add crumbled feta or fresh mozzarella before serving!
