Ingredients:
1 medium green cabbage, cut into 4 thick (1-inch) rounds
1 lb lean ground beef
½ cup tomato sauce (or sugar-free ketchup)
½ cup shredded mozzarella or Monterey Jack cheese, divided
½ tsp salt
½ tsp black pepper
½ tsp crushed red pepper flakes (optional)
1 tsp minced garlic
½ cup chopped green onions
½ cup fresh parsley, chopped
1 tbsp olive oil
Instructions:
Prep & Roast Cabbage:
Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
Arrange cabbage rounds in a single layer, brush lightly with olive oil, and season with a pinch of salt and pepper.
Roast for 10 minutes until slightly softened.
Make the Beef Patties:
In a bowl, mix ground beef, garlic, green onions, parsley, red pepper flakes, ¼ cup cheese, salt, and pepper. Shape into 4 equal patties.
Assemble the Burgers:
Spread 1-2 tbsp tomato sauce over each cabbage round.
Place a beef patty on top, then sprinkle with remaining cheese.
Bake & Serve:
Return to oven and bake for 10–12 minutes, or until beef is cooked through and cheese is melted.
Garnish with extra parsley or green onions if desired. Serve hot!
