Oven-Baked Cabbage Burgers

These oven-baked cabbage burgers swap out the bun for tender, caramelized cabbage slices, topped with juicy seasoned beef, tangy tomato sauce, and melted cheese. Perfect for keto diets or anyone craving a wholesome, flavorful meal without the carbs!

Ingredients:

  • 1 medium green cabbage, cut into 4 thick (1-inch) rounds

  • 1 lb lean ground beef

  • ½ cup tomato sauce (or sugar-free ketchup)

  • ½ cup shredded mozzarella or Monterey Jack cheese, divided

  • ½ tsp salt

  • ½ tsp black pepper

  • ½ tsp crushed red pepper flakes (optional)

  • 1 tsp minced garlic

  • ½ cup chopped green onions

  • ½ cup fresh parsley, chopped

  • 1 tbsp olive oil

Instructions:

  1. Prep & Roast Cabbage:

    • Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.

    • Arrange cabbage rounds in a single layer, brush lightly with olive oil, and season with a pinch of salt and pepper.

    • Roast for 10 minutes until slightly softened.

  2. Make the Beef Patties:

    • In a bowl, mix ground beef, garlic, green onions, parsley, red pepper flakes, ¼ cup cheese, salt, and pepper. Shape into 4 equal patties.

  3. Assemble the Burgers:

    • Spread 1-2 tbsp tomato sauce over each cabbage round.

    • Place a beef patty on top, then sprinkle with remaining cheese.

  4. Bake & Serve:

    • Return to oven and bake for 10–12 minutes, or until beef is cooked through and cheese is melted.

    • Garnish with extra parsley or green onions if desired. Serve hot!
