Ingredients:
2 cups mashed potatoes (cooled)
1 cup all-purpose flour
1/2 cup grated cheddar cheese
1/4 cup milk
2 tbsp butter, melted
1 large egg
1/2 tsp garlic powder
1/2 tsp dried thyme
Salt and pepper to taste
1/4 cup chopped green onions (optional)
Preparation:
Preheat oven to 375°F (190°C) and grease a muffin tin.
In a bowl, mix mashed potatoes, flour, cheddar cheese, milk, butter, egg, garlic powder, thyme, salt, and pepper until well combined.
Spoon the mixture into muffin tin cups, filling each about 3/4 full.
Bake for 20-25 minutes, or until golden brown on top and a toothpick comes out clean.
Let cool slightly before serving. Enjoy!
