Ingredients
For the Scallops:

- ¼ teaspoon black pepper

For the Cajun Cream Sauce:
- ½ cup mayonnaise
- ¼ cup sour cream
- 1 tablespoon Cajun seasoning
Instructions
Step 1: Prepare the Cajun Cream Sauce
- In a small mixing bowl, combine the mayonnaise , sour cream , and Cajun seasoning . Stir until smooth and well blended.
- Taste the sauce and adjust the seasoning if needed, adding more Cajun seasoning for a bolder flavor or a splash of lime juice for brightness.
- Cover and refrigerate the sauce while you prepare the scallops.
Step 2: Season the Scallops
- Pat the sea scallops dry with paper towels to ensure they sear properly. Removing excess moisture helps achieve a golden crust.
- In a small bowl, mix together the paprika , garlic powder , salt , black pepper , and cayenne pepper (if using).
- Sprinkle the spice mixture evenly over both sides of the scallops, pressing gently to adhere.
Step 3: Sear the Scallops
- Heat the olive oil in a large skillet over medium-high heat until shimmering.
- Add the scallops to the skillet in a single layer, ensuring they are not overcrowded (work in batches if necessary). Cook for 2–3 minutes per side , or until golden brown on the outside and opaque in the center. Avoid moving the scallops while they cook to allow a proper sear to form.
- Once cooked, remove the scallops from the skillet and squeeze fresh lime juice over them for a burst of citrusy flavor.
Step 4: Serve and Enjoy
- Arrange the seared scallops on a plate or individual serving dishes.
- Drizzle the Cajun cream sauce generously over the scallops or serve it on the side as a dipping sauce.
- Garnish with additional lime wedges or a sprinkle of fresh herbs like parsley or cilantro if desired.
