Ingredients:
4 slices of sourdough bread ![]()
2 ripe avocados ![]()
Juice of ½ lemon ![]()
Salt & pepper, to taste
200g halloumi cheese
, sliced
1 tbsp olive oil
Instructions:
Toast the sourdough slices until golden. Mash avocados with lemon juice, salt, and pepper until creamy. Heat olive oil in a grill pan over medium-high heat, cook halloumi slices for 1–2 minutes on each side until golden grill marks appear. Spread avocado mixture evenly on the toast, top with grilled halloumi, and serve immediately.
Notes & Variations:
Top with chili flakes for a spicy kick or fresh herbs for freshness. Swap sourdough for rye bread or gluten-free bread.
