  • 10 minutes (plus cooking time for beets)

  • Chill time: at least 2–4 hours (better overnight)

  • 8 medium beets, trimmed and scrubbed

  • 1/2 cup apple cider vinegar (or red wine vinegar)

  • 1/2 cup water

  • 1–2 tbsp honey or maple syrup (adjust to taste)

  • 1/2 tsp salt

  • 1/2 tsp black peppercorns

  • 1/2 tsp mustard seeds (optional)

  • 2 cloves garlic, peeled and smashed (optional)

  • 1 small bay leaf (optional)

  1. Cook the Beets

    • Boil, steam, or roast beets until fork-tender (about 30–45 minutes depending on size).

    • Let them cool, then peel and slice into 1/4-inch rounds or wedges.

  2. Prepare the Pickling Brine

    • In a small saucepan, combine vinegar, water, honey (or maple syrup), salt, peppercorns, and any optional spices.

    • Bring to a gentle simmer, then remove from heat.

  3. Assemble

    • Pack the sliced beets into a clean glass jar.

    • Pour the warm brine over the beets, ensuring they’re fully submerged.

  4. Refrigerate

    • Let cool to room temperature, seal the jar, and refrigerate.

    • Allow at least 2 hours (preferably overnight) for flavors to develop.
