The Ultimate Government Cheese

 # The Ultimate Government Cheese Mac & Cheese

Creamy, rich, and irresistibly cheesy, **Government Cheese Mac & Cheese** is a nostalgic comfort-food classic inspired by the famously smooth processed cheese once distributed through U.S. government food assistance programs. Its exceptional meltability makes it perfect for creating an ultra-creamy macaroni and cheese with a silky, velvety sauce.

## Ingredients

**Serves 6–8**

* 1 lb elbow macaroni

* 4 cups government cheese or American cheese, shredded or cut into small pieces

* 2 cups whole milk

* 4 tablespoons butter

* 3 tablespoons all-purpose flour

* ½ teaspoon garlic powder

* ½ teaspoon onion powder

* ½ teaspoon paprika

* ¼ teaspoon black pepper

* ½ teaspoon salt, or to taste

* ½ cup shredded sharp cheddar cheese, optional

## Instructions

1. **Cook the macaroni:** Bring a large pot of salted water to a boil. Cook the macaroni according to the package directions until just al dente. Drain well and set aside.

2. **Make the roux:** Melt the butter in a large saucepan over medium heat. Whisk in the flour and cook for about 1–2 minutes, stirring constantly.

3. **Add the milk:** Gradually whisk in the milk until smooth. Continue cooking for several minutes, stirring frequently, until the mixture thickens slightly.

4. **Season the sauce:** Add the garlic powder, onion powder, paprika, black pepper, and salt.

5. **Melt the cheese:** Reduce the heat to low. Add the government cheese a handful at a time, stirring continuously until completely melted and smooth. If using cheddar, stir it in as well.

6. **Combine:** Add the cooked macaroni to the cheese sauce and stir gently until every piece is thoroughly coated.

7. **Serve:** Spoon the mac and cheese into bowls and serve immediately while it's hot, creamy, and perfectly cheesy.

### Tips for the Creamiest Mac & Cheese

* **Don't overcook the pasta.** Slightly firm macaroni holds up better in the creamy sauce.

* Keep the heat **low when melting the cheese** to help prevent the sauce from becoming grainy.

* Add a splash of warm milk if the sauce becomes thicker than you prefer.

* For a golden baked version, transfer the finished mac and cheese to a baking dish, sprinkle with additional cheddar, and bake at **375°F (190°C) for 15–20 minutes**.

* A little smoked paprika or cris

py bacon can add an extra layer of flavor.
