# Italian Pot Roast
## A Hearty, Flavor-Packed Classic

## Ingredients

### For the Roast
* 3–4 pounds beef chuck roast
* Salt and black pepper, to taste
* 2 tablespoons olive oil
### For the Italian Sauce
* 1 large onion, finely chopped
* 4 cloves garlic, minced
* 2 cups crushed tomatoes
* 1 cup red wine, optional but recommended
* 1 cup beef broth
* 2 tablespoons tomato paste
* 1 teaspoon dried oregano
* 1 teaspoon dried basil
* 1 teaspoon dried rosemary
* ½ teaspoon red pepper flakes, optional
* 2–3 carrots, cut into chunks
* 2–3 celery stalks, cut into chunks
* 2 bay leaves
## Instructions
1. **Season the beef:** Pat the chuck roast dry with paper towels. Generously season all sides with salt and black pepper.
2. **Sear the roast:** Heat the olive oil in a large Dutch oven over medium-high heat. Add the roast and sear for about **3–4 minutes per side**, until deeply browned. Transfer the roast to a plate.
3. **Sauté the vegetables:** Add the chopped onion and celery to the same pot. Cook for 4–5 minutes, stirring occasionally, until the vegetables begin to soften. Add the garlic and cook for another 30 seconds.
4. **Build the sauce:** Stir in the tomato paste and cook for about 1 minute. Add the crushed tomatoes, red wine, and beef broth. Stir well, scraping up any browned bits from the bottom of the pot.
5. **Add the herbs:** Stir in the oregano, basil, rosemary, red pepper flakes, and bay leaves.
6. **Return the beef:** Place the seared roast back into the pot. Arrange the carrots around the meat and bring the liquid to a gentle simmer.
7. **Slow-cook:** Cover the pot and transfer it to a **325°F (165°C) oven**. Cook for approximately **3–3½ hours**, or until the beef is extremely tender and easily pulls apart with a fork.
8. **Rest the roast:** Carefully remove the roast from the pot and let it rest for **10–15 minutes**. Remove the bay leaves.
9. **Finish the sauce:** Taste the tomato sauce and adjust the salt and pepper as needed. If you'd like a thicker sauce, simmer it uncovered on the stovetop for several minutes.
10. **Serve:** Slice or shred the pot roast and spoon the rich Italian tomato sauce and vegetables over the top.
## Slow Cooker Option
You can also prepare this recipe in a slow cooker. Sear the roast and sauté the aromatics first, then transfer everything to the slow cooker. Cook on **LOW for 8–9 hours** or **HIGH for 4–5 hours**, until the beef is fork-tender.
