Lobster Grilled Cheese with Tomato Bisque


 


A rich, indulgent twist on classic comfort food: buttery, cheesy lobster sandwiches served with a creamy, tangy tomato bisque — perfect for a cozy meal or special treat!

🛒 Ingredients (4 servings)
For the Lobster Grilled Cheese:

🦞 Cooked lobster meat – 250 g (9 oz), chopped

🍞 Bread – 8 slices (sourdough or country bread works best)

🧈 Butter – 4 tbsp, softened

🧀 Cheese – 150 g (5 oz), shredded (Gruyère, cheddar, or a blend)

🥬 Optional: fresh arugula or spinach for extra freshness

For the Tomato Bisque:

🍅 Canned whole or diced tomatoes – 800 g (28 oz)

🧅 Onion – 1 medium, chopped

🧄 Garlic – 3 cloves, minced

🫒 Olive oil – 2 tbsp

🥛 Heavy cream – 120 ml (½ cup)

🍶 Chicken or vegetable stock – 250 ml (1 cup)

🧂 Salt & black pepper – to taste

🌿 Fresh basil – 2 tbsp, chopped

🍯 Optional: pinch of sugar to balance acidity

👩‍🍳 Instructions
1️⃣ Make the Tomato Bisque 🍅

Heat olive oil in a saucepan over medium heat.

Sauté onion and garlic until soft and fragrant (3–4 min).

Add canned tomatoes, stock, salt, pepper, and sugar (if using). Simmer 15–20 min.

Blend with an immersion blender until smooth.

Stir in heavy cream and fresh basil. Keep warm.

2️⃣ Prepare the Lobster Grilled Cheese 🦞🧀

Butter one side of each bread slice.

On the unbuttered side, layer cheese, chopped lobster, and optional greens.

Top with another slice of bread, buttered side out.

Heat a skillet over medium heat.

Cook sandwiches 3–4 min per side until golden brown and cheese is melted.

3️⃣ Serve 🍽️

Cut grilled cheese diagonally and serve hot with a bowl of tomato bisque for dipping.

Garnish bisque with extra basil or a drizzle of cream if desired.
