Ingredients (4 servings)
For the Lobster Grilled Cheese:
Cooked lobster meat – 250 g (9 oz), chopped
Bread – 8 slices (sourdough or country bread works best)
Butter – 4 tbsp, softened
Cheese – 150 g (5 oz), shredded (Gruyère, cheddar, or a blend)
Optional: fresh arugula or spinach for extra freshness
For the Tomato Bisque:
Canned whole or diced tomatoes – 800 g (28 oz)
Onion – 1 medium, chopped
Garlic – 3 cloves, minced
Olive oil – 2 tbsp
Heavy cream – 120 ml (½ cup)
Chicken or vegetable stock – 250 ml (1 cup)
Salt & black pepper – to taste
Fresh basil – 2 tbsp, chopped
Optional: pinch of sugar to balance acidity
Instructions
Make the Tomato Bisque ![]()
Heat olive oil in a saucepan over medium heat.
Sauté onion and garlic until soft and fragrant (3–4 min).
Add canned tomatoes, stock, salt, pepper, and sugar (if using). Simmer 15–20 min.
Blend with an immersion blender until smooth.
Stir in heavy cream and fresh basil. Keep warm.

Butter one side of each bread slice.
On the unbuttered side, layer cheese, chopped lobster, and optional greens.
Top with another slice of bread, buttered side out.
Heat a skillet over medium heat.
