Slow Cooker Hoisin Pork with Pineapple & Bell Peppers
Servings: 4-6
Ingredients:
2 lbs pork shoulder, cut into chunks
½ cup hoisin sauce
¼ cup soy sauce
2 tbsp rice wine vinegar
2 tbsp brown sugar
3 garlic cloves, minced
1 tbsp fresh ginger, grated
1 tbsp sesame oil
½ tsp black pepper
¼ tsp red pepper flakes (adjust to taste)
1 cup pineapple chunks (fresh or canned)
2 bell peppers (any color), sliced
1 tbsp cornstarch + 2 tbsp water (for thickening, if needed)
For Garnish:
Sliced scallions
Toasted sesame seeds
Instructions:
Make the Sauce: In a bowl, whisk together hoisin sauce, soy sauce, rice wine vinegar, brown sugar, garlic, ginger, sesame oil, black pepper, and red pepper flakes.
Layer Ingredients: Place pork chunks in the slow cooker. Pour the sauce over the pork, coating evenly. Add pineapple and bell peppers on top.
Cook: Cover and cook on LOW for 6-8 hours (or HIGH for 3-4 hours) until the pork is fork-tender.
Thicken (Optional): If the sauce is too thin, mix cornstarch with water and stir into the slow cooker. Let it simmer for 10-15 minutes until slightly thickened.
Serve: Spoon the pork and sauce over jasmine rice or soba noodles. Garnish with scallions and sesame seeds.
Variations & Tips:
Spicier Option? Add extra red pepper flakes or a drizzle of sriracha.
Leaner Cut? Swap pork shoulder for tenderloin (reduce cooking time slightly).
More Veggies? Toss in snap peas, carrots, or mushrooms.
Vegetarian? Use tofu or tempeh instead of pork (adjust cooking time).
Make It a Meal: Pair with a refreshing cucumber salad or steamed broccoli for a well-balanced dinner.
Enjoy this irresistible fusion of flavors with minimal effort—your slow cooker does all the work!
