Roasted Carrots with Whipped Ricotta & Spiced Honey


 


Ingredients:

  • 1 lb (450g) baby carrots, scrubbed and trimmed
  • 2 tbsp olive oil
  • ½ tsp salt
  • ¼ tsp black pepper
  • ½ cup whole-milk ricotta cheese
  • 1 tbsp honey
  • ½–1 tsp hot sauce (like sriracha or chili flakes)
  • 1 tbsp chopped fresh parsley or thyme (optional)

Instructions:

  1. Roast the carrots:
    • Preheat oven to 400°F (200°C).
    • Toss carrots with olive oil, salt, and pepper on a baking sheet.
    • Roast for 25–30 minutes, flipping halfway, until tender and caramelized.
  2. Prepare toppings:
    • Whip ricotta: Blend ricotta in a bowl until smooth (add a splash of milk if needed).
    • Spiced honey: Mix honey and hot sauce; warm slightly for 10 seconds in the microwave.
  3. Assemble:
    • Spread whipped ricotta on a plate. Top with roasted carrots.
    • Drizzle with spiced honey and garnish with herbs.
